Jürgen Stumpf owns three wine bars in Berlin that operate on the honor system. For the price of 1€ (about $1.50), you rent yourself a glass and get to sample as many of the wines as you want. At the end of the night you throw some bills or coins into a big jar, the amount based on what you think is fair.

That would be very dangerous for him if my friends and I showed up. We scour city for the cheapest drink prices. If the drinks are really cheap I will tip 50-100% If the drinks are not cheap I usually scale my tips back to about 25-40%.
It is not cheap to drink out when you are an ex bartender.

It is not cheap to drink out when you are an ex bartender. On the whole though, that would probably be balanced out by the non-bartending patrons.
As I'm sure you noticed when you tended bar yourself, generosity increases with alcohol consumed for most people.
On that score, quite a cunning plan. I'm sure that when inebriated, most people would under rather than over pay.
