When you film a remake you don't want to make an exact scene-by-scene copy such as the one of Psycho. However you don't want to throw 90% of the original story out the window either. Here are 22 "remakes" which differ tremendously from the original.

some of these i agree with and some I think were far off. scarface i think was its own movie, although may have been inspired by others, it didnt miss its mark. and i dont think 12 monkeys was a rip-off of La Jetee, but more like inspired by it.

You can compare all the remakes you want. For me, what's more astounding is the transfer from book to movie. Quick example - Gone With The Wind. In the book Scarlett has three children, not just Bonnie Blue. If that's not a major plot point, what is?

In the original novel of "The Postman Always Rings Twice", the main conflict is that the bride is 'gringo' and the groom and his family are old school Greek. That was the core to the conflict in the film. Of course, in the original movie, there was no culture clash. I can't remember the remake well enough to tell you if they restored that, which would have been good.

Honestly, it seems today's movies follow the books closer than those of the previous generation.
