Nicest food in a hurry=Stilton on toast. Anyone agree?

I'll happily make a meal of cheese and toast. Provolone is my favorite at the moment.

Lemon Ginger Cake

1 c sugar
1/2 c room temperature butter
2 eggs
2 1/2 c flour
1/2 t salt
3/4 c molasses
1 t ginger

Add ingredients to mixer bowl, in order, mixing well in between additions. Dissolve 1 teaspoon baking soda into 1 cup warm water, mix until smooth. Pour into buttered/greased pan and bake 30-40 minutes, until a toothpick comes clean. I use a silicone pan, so I can get it out of the pan easily before it's fully cooled.
Slice in half, spread lemon curd over bottom layer. Re-assemble cake and let fully cool before frosting.

Frosting
8 oz cream cheese
1/2 c butter
1 tsp vanilla extract
2 T lemon juice
1 t lemon zest
~ 2-3 c confectioners sugar

Cream butter, cream cheese, vanilla and lemon juice until light and fluffy. Add confectioner's sugar until the desired consistency is reached. Frost.

Corrected. Yep, 3/4 c...it gives most of the 'gingery' taste. More ginger bread than actual ginger, to me, but pretty tasty either way.

Substitute the Stilton for a strong Brie De Meaux and I'm there. :)

Or if you have a bit more time, fry some mushrooms in butter and garlic, place on the toast, cheese on top, and grill till the cheese is melted. Yummy. I prefer a mild cheddar or this hard goats cheese with the mushrooms though.

This really belongs in the 'What made you smile thread', but I decided this is more appropriate. Thank god for some good weather. This was taken a few days ago....


After bustin out the grill, I decided that some smokin was in order. I just pulled these out of the fridge (wanted to let the rub soak in) and am about to smoke them with mesquite chips. I'll update with the finished product later on.

Root Beer cupcakes

I couldn't find root beer schnapps without going off base, so used more root beer instead. If I were to make them again, I'd boil the root beer down a bit to reduce the liquid. I did swap root beer extract in place of vanilla extract. A home brew supply store will carry the root beer extract, or you can order it (and other fabulous extracts) from Faeries Finest.

Making them...fairly easy, yes. I'm still learning 'cake' skills...So, I'm sure they'll be pretty and mounded for someone else instead of flat topped like mine.

Oh, and horsefeathers...This is why Hubbin is ok with me mailing cookies off. ;) :D

It's not actually my recipe, but is the one I use,

originally from 'the bread book' I found the recipe here :-

Crumpets at the Foppish Baker

edit: depending on what makes you unhappy about them, assuming the recipes you've tried are similar, my biggest issue is the crumpets coming out blind, without the holes, adding a tablespoon or 2 of warm water to the batter normally helps that. Also don't have the griddle (or whatever) too hot, and don't try to make them too thick.


If you're just having them toasted, Pikelets are a good alternative, made without a mold/ring, they're more freeform, but similar to cook as an American pancake.


and be sure that once cooked, they've cooled and been toasted before eating.. it does matter!

I make a batch, and eat a couple, then the rest go in the freezer. I pull out a couple, and toast them twice--once to fully thaw and one more time to crisp the outside.

So yummers.

it's easier than easy to eat them faster than you can make them.
