I'm wondering how did you learn to use chopsticks?
Did you feel it difficult at first?
My dad was stationed in Hong Kong when he was younger and so he learnt there then taught me when I was very young.

I found it very hard at first. It takes a lot of co-ordination. Especially eating rice.

I got the hang of it eventually. It made it a lot easier when I realised that you're meant to use chopsticks in conjunction with a bowl and not a plate.

Hahahaha! Very true! Some Chinese restaurants confuse me. Sometimes they give you chopsticks, but no bowl, just a plate...

If I'm eating Chinese, I eat from a bowl with chopsticks, much more authentic. Even more with Japanese food. *drools*

Yes, I have found a *few* places that the Japanese and Thai food is authentic (or relatively close). I've found one place with authentic Filipino food.

Most "Chinese" food places serve stuff that is so Americanized, no self-respecting Chinese person would recognize it.



Now, please excuse me while I eat my yakisoba beef and gyoza.

Food made in restaurants is not authentic. Food made by a grandma, now thats authentic. Even if she cooks tex-mex chinese. I could not figure out yet what happens if a grandma cooks in a restaurant as a grandma. Probably the space-time continuum collapses.

Heh. Ya, basically, any ethnic food that hits American soil gets changed for American tastes. Anything that you get at a restaurant or that is otherwise served to the general public is ________-American, whether it be Chinese, Thai, Mexican, Italian, or whatever. It's just not the same as made by Grandma, or if you go to the actual country, physically. Some places come close, and I do love Mexican, Chinese, Japanese, Thai, and Italian restaurants, just, the menu they all have are Americanized somewhat.

It is now getting possible to get more authentic food.

There's a little Thai place near by that I'm a regular at and although I've never been to Thailand it's clearly more like the real thing that at other places.

Here in the UK when immigration from China became a substantial thing the Chinese tried to create menus that they thought would appeal to the British palette based on what was already available. At the time this was, to the casual observer, Fish & Chips. So the assumption was that everything should be battered and deep fried.

That has become the norm and the perception of a lot of British folks of what Chinese food is.

I'm sure it does, though I spend little time in other countries so my experience and paradigm lies solely within the US borders. ;)

They aren't wronging the source. Cooking is a form of art, and artistic liberties are always allowed. Variation is the spice of life. :) It's just something I point out sometimes, that often you won't get truly authentic ethnic food unless you go to the country itself. Doesn't make it better or worse. :)
