In my experience this is more like this:
French lunch:
(............)+(............)+(............)

American lunch:
(....................................)

Several small and different might be less fattening than one huge, even if the huge is less than the several small together.

Only if the small meals are spread over a couple hours. If it's in one lunch, it's still more food.
I can split my country fried steak into 3 plates, but it's still a country friend steak with the same amount of calories.

But yes, we grew up with the idea that wasting food is bad. Residue of a pioneer heritage, where food is quite valuable and you're not quite sure of your next meal.
