Seems like smart business to me. If I could make my product look better by simply pumping some gas over it, I sure as hell would. Personally, I'm not too worried about it. Just check the date when you buy meat and you'll be fine.

Most hunters know that to get more tender and more savory meat you let it sit out in the open air for a while. Yeah, it discolors but if you remember to cook it, wow tastes good.

I have an uncle that swears by this to the point where he lets his venison hang on the carcass for over a week before butchering it.

Ya beat me to it! as a hunter myself, it is the decomposition that helps make it more flavorful. Not fer the squeamish I guess, but you and I already knew this darlin. ;)

Altho, what is MORE dangerous is the fact that my sis in law worked for a meat packer and many pieces of meat with tumors and alike are still sold to the public, sans the infection. They just cut around it.

I prefer to harvest my own, when I can.
