Researchers at New Mexico State University recently discovered the world's hottest chilli pepper. Bhut Jolokia, a variety of chilli pepper originating in Assam, India, has earned Guinness World Records' recognition as the world's hottest chilli pepper by blasting past the previous champion Red Savina.

Actually, it's funny you should say that because the best thing to soothe your palate when you eat hot peppers is something sweet or fatty.
Capsaicin, the component that makes chilly peppers 'burn' in your mouth, dissolves well in oily substances but not in water - so it's not a good idea to drink a glass of water when you're in distress - drink milk instead, preferably fat.
Also, it's a good idea to spread some oil on your hands when you're cooking with fresh peppers.

And always, always, always (I don't think I can stress this enough) ALWAYS wash your hands between handling chillies and going to the toilet.
