Read the article again. Tempe is made with soybeans. Here they made a similar but different food using barley and another batch using oats. Both are made using the same fermentation method that produces tempeh but results in different nutritional content.
The question is was the method altered in some fashion to allow for greater uptake of iron, if not than your normal tempeh would work as well.
