Plime Recipe Book

I was given a brilliant idea by Suebe to create a Plime recipe book. If everyone could post some of their recipes here, we could really make this special. I might even end up actually making a book and putting it up on Lulu. I'd photograph the recipes, too, but if you want to do that as well that'd be swell.

I'll kick things off:

Pancetta-bread

Mix together flour, sugar, water, salt, etc...
It'll work with the proportions from most bread recipes, but lighter is better. Here's a reference that works well.

After the dough has risen, split it into two or three balls of dough, each about one and a half fists in size.
Let these rise for about 20-30 minutes.
Using a wine bottle (or a rolling pin, if you're feeling fancy) make a rough rectangle out of each ball of dough.

Get some grated cheese - a mix of cheddar and mozzarella seems to work best - and sprinkle into the center of the dough.
Now, the pièce de resistance - the pancetta.
Fry up some pancetta. Let it cool.
Gently break it into pieces over the dough - you should have a roughly 50-50 mix of cheese and pancetta.
Roll the dough into a baguette-loaf styled thing, and pinch the ends together. It helps to dab a finger in water and rub it over the edge - the dough seals much more easily.
Using olive oil, lightly coat the loaf.
Repeat for the other balls of dough, and bake on a tray at 350 degrees Fahrenheit until the crust is golden brown.

Let it cool for about ten minutes - then slice and eat while warm.

My favorite hot sauce. Simple stuff.

Equal Parts Franks Red Hot Sauce
Equal Parts Melted Butter or Whip (Butter Sub)

Makes a delicious Mild Sauce for wings or steaks. I used to cook at this b***hing pub. Was one of our recipes.

Then if you want to be creative, grab some of them tyson chicken tenders, bake them up, (unless you have a fryer in which case, FRY THEM!) Heat a tortilla wrap and melt some cheese in the center of it, Mont Jack is always good, finely dice some tomatoes, lettuce, and red onions, pull the heated wrap off the flat top (Or what ever heating source you are using to warm them) Pile on the veggies, slices of the chicken fingers, and add sauce to taste. Best f**king wrap Ive ever eaten.

There is, of course, Nutrifectra - the food part of the Plimiverse. It doesn't get much attention except for spammers, but if there's interest we could resurrect that.

It used to be linked in the menu on the left, but no more.

Now the food.

Big Fluffy Pancakes



You can use self raising flour and omit the baking soda if you want - the results are about the same.

Separate the egg yolks from the whites. To the yolks, add the flour, the milk, the baking soda and the salt. Mix this to a smooth batter.

Whisk the whites until they form stiff peaks then gently stir this foam into the batter - you want to keep as much of the air in as possible.

Lightly oil a pan and heat it. Pour some of the batter in - how much depends on your preference; I generally go for about a ladle full, although that could depend on how big your ladle is.

It will take 1-2 minutes per side so flip it when it's ready.

Simplest way to eat these is with a little butter and maple syrup, but they fall somewhere between sweet and savoury, so you can have them with anything.

If you want to get really fancy, just before you flip them, sprinkle stuff on them. Onion and sweetcorn is good. Chopped berries too. Or chocolate chunks. Or bacon bits. Whatever works for you, really.

Spinach Artichoke Dip

1 8 oz jar of Marinated Artichoke Hearts, well drained and chopped
1/2 box of frozen, chopped spinach, well drained
1 cup mayo
1 cup shredded jack cheese
1/2 cup shredded parmesan
2-3 cloves minced garlic
1 tsp ground pepper

Mix all ingredients, reserving 1/4 cup of each cheese. Spoon mixture into a shallow baking dish. Top with remaining cheese. Bake for 40 minutes at 350. Serve with crudites.

I also use pepper jack cheese and add some hot sauce to give it more bite.

Gooey Chocolate Chip Cookies

1 c. Butter, softenend

2 eggs
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
12 oz chocolate chip cookies
Ground Cinnamon to sprinkle on top

Cream butter and both cups of sugar. Add eggs, and vanilla, mix well. Combine Flour, salt and baking soda, whisk together. Add to creamed mixture slowly, completely incorporating the flour into the dough before adding more. Once all flour is in, add chocolate chips, mix well.

Drop 1/4 c. calls onto baking sheet (I prefer to use parchment paper for easy removal). Bake at 350 for 9 minutes, open the door, lift the baking sheet about 2 inches and then drop it back down. Sprinkle the cookies with cinnamon. Bake an additional 2 minutes. Remove, let cool on rack for 5 minutes, then transfer to a cooling rack to cool completely.

Th cookies are very rich, and dropping the sheet gives it a gooey texture without feeling raw. If you prefer a crisper cookie, reduce to 3/4 cup butter and don't drop them.

lol--that was a cheat. :) Use MELTED butter (let it cool before adding the sugar), use 3 eggs instead of 2, and swap out 1/4 cup of flour for 1/4 cup of peanut butter flour. No dropping during baking, no cinnamon, and bake for 13 minutes.

Sorry--I tend to play around with recipes a lot, so they aren't always exact. That's going to get you really close, though.

Oh, and I'll definitely send him some cookies. I contribute batches for that all the time. :) Send me what info I'll need...I have a flourless peanut butter cookie recipe I'm going to try this weekend.

For those who aren't familiar with Lulu, it's an easy way to publish. No advertising is included, but you get some anyway if you make the item public.

You can see a cook book I put together and sold via Lulu. It's called Aquariasts Cook and is something similar to what's proposed here--a collection of recipes from members of a forum. Sales are pretty low, so it's not a money maker.

I put all the recipes into a database to generate the index and such. Inserting pics is planned for the next one. It's not a huge challenge, and I'll gladly offer my services if there's enough interest.

Also, Lulu offer a printing&publishing service. It's not as cheap as getting a huge print run, but it's affordable, and what Plimate wouldn't want a physical Plime recipe book?

Gratheo’s Nasi Goreng

Required:
500g rice
500ml water
3 shallots
3 cloves garlic
Sweet soy sauce
2 large red chili peppers
1 chicken breast
3 spring onions
1 egg
Cooking oil
Fried tempeh (optional)
Sambal sauce (if you can get it)
Wok
Wooden spoon

This recipe is best started off the night before. Steam the rice in the water until cooked. If you don’t have a rice cooker, boil the rice. Set this aside for at least two or three hours.
You’re going to be doing a lot of stirring in this recipe, so it’s a good idea to do all the chopping beforehand.
Slice small circles from the green onions. Finely chop the shallots. Crush the garlic. These three will make the start of the dish.
Cut the chicken breast into small pieces - about the size of your thumb.
Slice the chili peppers into small, thin strips. Don’t get rid of the seeds - they’re responsible for the spice. If you’re using the tempeh, either cut it into small cubes or julienned strips.
Now, to actually cook.
Add a good splash of cooking oil to your wok. (You do have a wok, right? Right?) When it begins to steam, toss in the shallots, garlic and spring onions. Let these cook until you can easily smell their aroma. Now, add the chunks of chicken. Keep stirring constantly until the all the chicken is cooked. (i.e. you can’t see any raw portions)
This is going to be quick. Add the egg, and as soon as it begins to fry stir everything and break up the egg. Add the rice immediately.
While continually stirring, add the sweet soy sauce. About a teaspoon to a tablespoon worth will do, depending on how much you like soy sauce.
Keep stirring - the rice should be evenly browned. Now add the chili peppers and about half of a teaspoon of sambal sauce. (So as not to offend your delicate Western palates, I’ve reduced the sambal amount significantly. Wimps.) Keep stirring. If you have the fried tempeh, add it now. After about another 2-4 minutes, everything should be ready.
Serve with a fried egg on top.
Notes: Nasi Goreng can and should be made with whatever you’ve got available, so long as it fits. Everyone ends up developing their own recipe - it's a very individual dish. Don’t be afraid to modify, add or remove some ingredients. In fact, if you don't, I'll be disappointed in you.

Pasta Salad Recipe

Original
1 cup whole wheat shell pasta
½ cup chopped tomato, cucumber and onion
½ cup Feta cheese
4 Kalamata olives


What we did:

½ lb. pasta (whatever kind you like – we used different kind of small pastas
3 plum tomatoes or equivalent grape tomatoes
1 cucumber
4 sprigs scallions
5 basil leaves
15 olives halved
Lemon juice
Liquid from olives
½ cup Feta cheese

Cut tomatoes, cucumber and olives into ½ ″ pieces
Chop scallions and basil into ¼″ pieces
Cook pasta al dente
Let pasta cool to room temperature
Mix all ingredients and feta cheese into pasta
Can serve at room temperature or cool and serve

Adjust quantities according to servings needed

Someone told me about this recently - caught her buying the ingredients in the supermarket. She adds vanilla extract and crushed vanilla Oreos instead of vanilla wafers. It sounds awesome.
Plus, the presentation in sand pails is just so cute.


Sand Cake

1 three-quart plastic sand bucket or 3 one-quart sand buckets and shovels
1/2 cup butter (one stick)
2 8-ounce packages cream cheese
1/2 cup powdered sugar
12 ounces frozen whipped topping
3 1/2 cups milk
2 3/4-ounce packages instant vanilla pudding (other flavors may be used)
1 20-ounce package vanilla wafers, crushed
Beach Bears, Gummy Worms, and/or Gummy Sharks for garnish (optional)

Using soapy water, wash sand buckets and shovels, rinse them and
dry them, then set them aside. On a microwave safe dish, place
butter. Place in microwave on defrost (or 30% power) for 1 minute.
Put butter in large mixing bowl. Repeat softening process with
cream cheese and add to mixing bowl. (Note: you can also place
butter, cream cheese, and whipped topping on the counter for 1 hour
to soften them.)

Mix butter and cream cheese together. Uncover frozen whipped
topping and place in microwave on defrost (or 30% power) for 1 to
2 minutes. In a medium-size bowl, add milk. Sprinkle pudding over
milk and whip or beat until thickened, about 1 minute. Add pudding
and whipped topping to the cream cheese mixture and mix until smooth
using a wooden spoon or electric mixer. In a food processor,
process vanilla wafers until they form a fine even crumb. Or place
wafers in a plastic bag and roll them, using a rolling pin, until
you have completely broken them up.

In the buckets, place a layer of crushed vanilla wafers, then a layer of the cream cheese-pudding mixture. Keep layer until full and end with a layer of crushed wafers.

Cover with plastic wrap.
Refrigerate several hours. Before serving, decorate with Beach Bears, Gummy Worms, or Sharks if desired. Use shovel to serve.
Serves 8-10 people.

Ricotta Cookies

1 cup butter
2 cups white sugar
2 eggs
16 ounces ricotta cheese
2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
Icing:
1/2 cup milk
1/2 teaspoon butter
1/2 teaspoon shortening
4 cups confectioners' sugar
1 tablespoon lemon extract (also tastes great with almond or raspberry extract)

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, cream together the 1 cup of butter and sugar. Beat in the eggs, one at a time, then stir in the ricotta cheese and vanilla. Add the flour, baking powder and baking soda. Drop by rounded spoonfuls onto the prepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven.
To make the frosting warm the milk, 1/2 teaspoon of butter and shortening, in a small saucepan. Cook over medium heat, stirring occasionally until solids are melted. Remove from heat and gradually stir in the confectioners' sugar and lemon extract. Drizzle icing over cookies, cover with candy sprinkles if you so desire.

All I got left in the fridge is chicken, bacon and apples.

Ingredients
4 bacon slices, diced
1/2 cup peeled, chopped Granny Smith apple
1/2 cup dried cranberries, divided
1 tablespoon fine, dry breadcrumbs
1/2 teaspoon poultry seasoning
1/2 teaspoon ground cinnamon
4 skinned and boned chicken breast halves
2 tablespoons butter or margarine
1 cup apple juice
2 tablespoons apple brandy or apple juice
1/4 teaspoon salt
2 teaspoons cornstarch
1 tablespoon water
1/4 cup coarsely chopped pecans
2 tablespoons chopped fresh parsley


Preparation
Cook bacon in a large skillet over medium heat until crisp; remove bacon, reserving 1 tablespoon drippings in skillet.
Saut chopped apple in reserved drippings over medium-high heat 4 minutes. Remove from heat; stir in bacon, 1/4 cup cranberries, and next 3 ingredients.

Cut a 3 1/2-inch-long horizontal slit through the thickest portion of each chicken breast, cutting to, but not through, other side, forming a pocket. Stuff apple mixture evenly into each pocket. Wipe skillet clean.

Melt butter in skillet over medium heat. Add chicken, and cook 8 to 10 minutes on each side or until done. Remove chicken, and keep warm.

Add remaining 1/4 cup cranberries, apple juice, apple brandy, and salt to skillet. Stir together cornstarch and 1 tablespoon water until smooth; stir into juice mixture, and cook, stirring constantly, 1 minute or until thickened. Spoon over chicken, and sprinkle with pecans and parsley.

Digi's almost regionally famous Chicken and rice soup

4 chicken leg quarters
half a sweet onion
two cups of cut up cauliflower florets
one cup cut up mushrooms
four diced carrots
One cup of NON INSTANT rice
sage, marjoram, thyme and rosemary to taste (fress or dried)
salt and pepper

Peel the skin off the chicken... drop it in the pot with about 3, 4 quarts of water. You can add boulon if you want, i usually don't.
If you're using fresh herbs i'll usually tie a few sprigs together with string and drop it in so i can remove it easily once the flavor seeps.. if it's dried i'll usually rub it all together to a green powder and drop it in
let the chicken cook, take it out and let it cool so you can rip it off the bone. it's important to the taste to use boned chicken, though. Drop your veggies in and let them start to soften up while you shred your chicken.
drop the chicken back in and let it all simmer together for about an hour until everything's nice and tender and almost mushy
drop the rice in, give it another 20-30 minutes, and you have soup so wholesome it might cure cancer.
