Having done this many times now I'd say don't add anywhere near as much lemon juice as that - about half what he says. Also I'd say pull the olive oil ratio back a bit - maybe halve that again.

Then you can flavour it however you like.

Weekend before that I was a at a barbecue and I made a bunch of prawn kebabs and served them with a seafood sauce version of that made with sundried tomatoes for flavour.

Oh yeah, making your own dips is good. I'll have to try that one sometime. Although I have to say something that I realized I forgot to put down - when salting them after they come out of the pot, use non-iodized salt or sea salt - the larger granules seem to make it work better.
