This might not have time to catch on, though, because gesture-based interfaces (no touch screen required) as in "Minority Report" are coming soon, too.

A fair shout -
But as the guy said at the begining of the video - this is both scaleable and uses an old(ish) technolgy (A bit like ajax) meaning it may be affordable to the average joe.

Gesture-based interfaces may come soon but will only be available to those who can afford AI robots like those in AI. Also on its way(ish).

A friend and I were discussing this kind of technology yesterday, and how well it would work for video editing and visual effects. We were mostly joking, but it's awesome to see that it might soon be possible!

The drawback to gesture-based interfaces is that the user gets tired holding up their arms in space after a period of time. While the Minority Report concept looks exciting, think about it, how long could you really sustain all that broad up-in-the-air movement? Fifteen, maybe 30 minutes? Not unless you worked out at the local gym regularly.

So any gesture-based interface that is continually used is really going to have to be something you can reach out and down to interact with -- from a seated position -- not from a standing position and out or up.

Exciting, sure, but practical?

Practical? - have you ever met a hairdresser?
Think about it - the position of their arms is a serious pain but.......

Also think about piano positioning. Upper arms vertical, lower arms horizontal and most of all - seated.

There is no reason why the screen on that demonstration could not be lowered to fit over a seat.
