Just as cows get a lot of gas they quite often suffer from trapped wind. One way of dealing with the problem is to jam a hollow tube in the side of the cow and let the trapped gas out. In the story that read a French farmer discovered the hard way that smoking when carrying out this procedure is not clever. The hard way being the explosion that destroyed the cow, the cigarette, the farmer and the barn he was in at the time.
Personally though my first thought wasn't of igniting the bag (that came in about 3rd or 4th), it was wondering how much farting the cow would have to do before it took off.

Why not just attach a slow-burning pilot light to the back of each cow, that way any noxious gas would be combusted upon exit. Don't try this at home, kids...
